Grinding noise means the clutch free play is way out of adjustment. Slow to come back could mean any of a number of things, such as the throwout bearing binding on the shaft, binding somewhere in the pedal linkages, etc.. Or, the combination of the two could be telling you that the clutch and pressure plate need to be replaced.
