Your carb needs to be cleaned and the float adjusted properly. By cleaning I mean soak in in carb cleaner overnight and blow it out with compressed air. Otherwise your new parts will do no good. You have found the main jet. Max power is 5 turns out, will probably run with 3-3.5 out. The screw can be turned in if you do not need max power. Otherwise it is a "fixed" jet, and "adjustment" does not affect the way the engine runs unless you turn it in too far. The other 2 screws are idle mixture and idle speed. Look closely at them and you can tell which is which. The gaskets do not need any kind of sealer, more harm than good if the sealer gets in the carb. You could also have a governor problem or a leak in the intake manifold.
