Without feeling it, I don't know for certain what "very stiff" means; but given the time and money you've put into it, I'd disconnect the lever rod and try to work the control rod by hand to determine if the stiffness is in the friction control of the lever, or in the touch control unit itself. It shouldn't be that stiff if there is no blockage. But, a new valve (if new during the rebuild) can be pretty stiff. It's a judgement call I think. No clue on the thermostat, sorry.
