The service manuals (IH Blue Ribbon Series or the I&T IH-8) are more technical service manuals, and don't really address day-to-day maintenance. If you want to adjust your valve clearance, or shim the gears in your tranny, those are the books you'll need. For this kind of question, you can't beat the Operator's Manual. That's the one that has routine maintenance procedures. You can buy one in the store on this site or at www.binderbooks.com.
There is no dipstick. You'll see two petcocks on the left side of your oilpan. There's a quart's difference between the two. General rule is that if you open the lower one and get oil, you're fine. If you don't get oil out of the lower one, close it. Open the upper one and add oil until it flows out there, then close it, too. Now you're full.
Your filter is under the tall dome at the right rear of your motor. It looks like a nut on top, but it is a long hollow bolt holding everything down. The dome contains the replaceable filter element that comes (CaseNH, CaseIH dealer or NAPA are all good, easy sources) with a separate gasket. Only caution there is that the gasket (think of a square sided O-ring) likes to stick in the groove at the base of the housing, especially if it hasn't been changed in a while. Just make sure the old gasket is out before installing the new one and you won't have any trouble.
