Those prices are pretty much in line with what consessions charge in arenas, stadiums, and convention centers. When you've got a captive audience and no alternatives, it's surprising how many people will pay that much.
There isn't as much profit in it as you'd think, though. Every person that puts their hand on that bottle of water needs to be paid, and those bottles get handled several times between the loading dock and you. Even at minimum wage, that's a lot of payroll. Plus you've got upkeep on the facility, heating and/or cooling, and if there's a profesisonal sports team involved with the facility, hoo-boy... Plus there's got to be some left for the owner at the top who's bankrolling the entire operation, else there would be no point to even having the facility...
