The swap should work. And you won't have to worry about the Super M carb pushing more fuel/air than the engine can use. At governed RPM your SH engine can draw only a fraction of an SM carb's maximum flow rate. (It's about like when you swapped a 4 bbl onto your Chev 350...)
Only downside is you may find it more difficult to achieve decent slow idle (ie. smooth and steady) with the SM carb since its slow idle calibration for the higher idle flow of the larger displacement SM engine.
