Save the parts if you take them off. That'll keep the guys happy who say you're ruining your tractor. You can re-seal the pump and put everything back on, and the buyer will be none the wiser.
Frankly, enjoy the tractor and do whatever you want to it. Tractor collecting has never been a profitable venture. The tractor will never be worth as much as you put into it, and you will always sell it at a loss.
Besides, who knows where this will be in 10-20 years? It'll probably be one of two places:
1. All these tractors will be worthless.
2. All these tractors will be super-valuable.
Either way, it won't matter that you took the hydraulics off. Either you'll lose your butt, or you'll make a windfall when you sell it.
