Bob M's diagram is for POS ground like Allan said. If you connected the NEG battery terminal to ground out of habit, that's why the ammeter is reading backwards. You can leave it that way, just swap the wires on the ammeter.
It sounds like it's charging, ammeter wired up, backwards, but it shouldn't be pegging the meter like that. That indicates something is wired wrong or your regulator is not working.
Did you leave the FLD and BAT jumpered together? You should only touch them together MOMENTARILY. Once they touch, the generator is polarized.
