With 30 weight oil you should have around 40 psi hot at high RPM. There are a couple gasket designs for the oil filter base over the years and you have to make sure your new gasket matches the filter base not the block. An incorrect one will cause low pressure. Also adding the new metal valves in the filter housing can cause trouble as the seats in the pot-metal base wear and the new metal valves don't seat correctly. Its best to find a cast iron filter base from an earlier 560, much better design.
