NOS is New/Old stock, meaning a new (OEM) part that has not been used, even though it may have been manufactured many years ago. OEM (original equipment manufacturer) as opposed to replacement parts made by another manufacture. Sometimes a part will be offered as NOS but thats not accurate if the part is aftermarket, and generally an aftermarket part is less valuable, often poorer quality, and not an exact replacement.
