Starters use an electromagnet instead of fixed magnets. When the battery gets reversed, the electomagnets in the field and armature still keep the same RELATIVE polarity and the starter still spins the right way. Also, six volt starters work just fine on twelve volts. In fact they spin a little faster, helping to start the engine better.

So, convert away, if you see the need. The starter won't need to change.
