Take them down to 45 or 50 on the first round, then down to 65 or 70 on the second pass and finall down to 80. Run engine until warm and let cool. I always warm up and cool a second time, before going back over and retorquing the last time, again to 80. Because the rocker has to be removed, this will mean setting your valves twice.
Manifold nuts, I've never seen a spec, so it's common sense snug with one extra snug. Make sure you have the washers under the nuts where the flanges are split to allow for expansion and contraction.
