little bit of a long shot given the circumstances as described, but one thing I'd look for is to be sure the float doesn't have a hole in it.
I assume whoever rebuilt your carb would have checked this, but you never know.
If it's a tiny hole, the float could work just fine for a while, until it slowly fills with gas leading to a flooding situation (since it can't float all the way up, the needle valve never closes).
Aside from that - dirt/particles in the gas tank/fule line can randomly flow in causing intermitten problems like this.
Make sure you lines are perfectly clean, and you have a good clean screen and no junk in your sediment bowl.
