That's an unusual problem. With valve and seat grinding, they recess further into the head and should get higher. All I can think of is that someone ground too much off the tips of the valves. Did you have valve seats installed in the head? Where did the valves come from they installed? New or used? I can't imagine any other valve fitting besides the right one.
Better ask the machine shop that did it, seems like they should have checked the installed height.
