Water temp gauge would work (if it fits) for Touch Control, but would look stupid up there. The proper gauge is available, and cost is comparable to a water gauge, why not do it right? Aftermarket manifolds are okay, but with a jillion tractor salvage yards across the Fruited Plain, you should be able to find a nice used one. You'll like that two-row cultivator. That is one of the most relaxing pastimes ever. Quiet, easy to steer, 3rd gear, throttle just above idle, aromatic cloud of fragrant cigar smoke...
