Super Chief parts are widely available, from your CaseIH dealer, Shoup, even many Tractor Supply stores. They still sell them on new plows.
On the plow types, a semi-mount will follow the contour of the field better than a mounted plow, and give you a more consistent plowing depth. Long mounted plows tend to dig extra-deep in the rear when a tractor starts up a hill, and go shallow when the tractor crests the top of the hill.
It doesn't start to become a problem until you get to about 4 bottoms unless you have some very steep hills in your fields. If your hills are that steep you might want to back off to a 3-bottom plow for your 560.
