Todd - Ammeter pegging on the + side immediately after startup is normal with an alternator conversion. Similarly if the battery is low, the the ammeter will remain pegged while the motor runs until the battery nears full charge. Presuming everything's wired up correctly, the battery going dead after week says there's an internal problem with the alternator (has a current drain when shut off). Test by charging the battery then removing the ground cable. If the battery stays up the problem's with the alternator.
