Agree with everyone else to use HyTran (or EQUAL - don't use cheap oil in anything) for the hydraulics. Gear case should be 80w-90.
Engine oil can be a hot subject. As was mentioned above, the SG/SH oils are a lot more improved than what was available in 1950, and offer a lot better protection at a lower viscosity to reduce wear at a cold start. Do some reading at BobIsTheOilGuy.com - very educational, then make your decision.
I'm using a 10w30 in my SA because it was worn out when I got it, otherwise I'd use a 5w20 all year.
