Hog killing was quite a big to-do when I was a kid. There was no way to keep the chittlin's, so we always had a chittlin dinner. Chittlin's (boiled & fried) collards & corn bread. And, hog killing was followed by rendering lard, which meant cracklin's. I never much cared for cracklin biscuits, but I could eat my weight in them just plain.
