Mechanically separated chickeneis the process of separating pulverised bone from the pulverised "fleshy material" and fat that comprise the pasty remnants of a chicken carcass as it passes through the processing plant. Basically they push it through a sieve and anything that goes through is deemed "meat" and what stays behind is "bone". Hard to tell the difference without a microscope.
