One trick to killing off thistles is to go after them in fall, not spring. In spring they flow sap from the roots to the buds, to make a good seed head. In fall they flow sap from the leaves to the roots, to build up their root system.
Hit them hard in the fall, and they will die off much quicker.

I think the restriction is 7 days esp for milk, and I try to leave it at that myself, tho not much trouble for grazing in a spot-sprayed field.
