I have the T1i (500) which is one generation older. Both canon and Nikon make really good DSLR's and lenses. Nikons seem to have a better feel and layout to many people while Canon lenses are regarded to be superior. Both take great pictures though.
The 18-55 is II kit lens is considered a decent starter lens, but nothing too special. is (image stablization) is very good on canon lenses with that technology as it is built into the lens and not the camera. the gen 1 18-55 is considered to be pretty low end though. I immediately replaced my stock lens with a 15-85 IS for walking around though and absolutely love it at shows. I found the 18-55 to not be as clear as I had hoped and the extra range is great since I don't want to be swapping lenses a lot at dusty shows. I have a 70-300 is as well for a telephoto but don't use it much. Your quality of pictures is going to be almost entirely dependent on your skill and quality of glass. the camera body is much less a factor, so don't be surprised if you spend far more on the glass then the camera.
As far as ebay bargains go, don't. 90% are probably scams, do a little research and you will find many of these are storefronts for a notorious new york operation that changes names frequently. You might get nothing, or you might get an email saying you need to spend extra money if you want things like lens caps, batteries, straps etc that are normally included. If you don't take the "upgrades" you might not get your order etc. Its all a big scam for the most part and is well documented.
Theres only a few operations you should feel comfortable with buying from, these are B&H and Adorama. If the list price is less then theirs, its probably a scam. Canon does have its on store, and will occasionally have good deals on refurb equipment, as will Adorama and B&H. KEH.com is another site that deals in used cameras and lenses and is supposed to be decent. online photography buying is probably the worst as far as buyer beware.
