The saving grace of a woman like you (and I) have is that she's going to appreciate whatever you do, so there's not much chance of a fatal screwup. Her appreciation of her lifestyle, and of you, is what makes her so great. May I make a few observations, after 41 years with such a woman:
She probably doesn't care much for perfume, jewelry or flowers. She has the grace to accept them, but it doesn't really hit the mark. She's really more concerned that her goats or horses are being fed properly than getting a diamond necklace.
She likes practical things that fit in the lifestyle she has chosen. My wife likes stuff that makes her warm- polar fleece, fur lined gloves, down coats, insulated muck boots,- you get the idea.
What does she like to do as a hobby? If she likes to read, the suggestions about a Kindle are good. Gift certificates for stores where she can buy supplies for her hobby are good, too. And if she really doesn't have any "frivolous" hobbies and would just rather can stuff, that's where you need to go. If she likes massages, thats a good area. It can be hard to identify the preferences of women who just aren't into frivoulous things, just do the best you can.
Congratulations on having a woman to share your life with, who isn't shallow. And the best thing of all is, if you miss the mark with your'r gift, she's not going to make you sleep on the couch. She loves you for who your are, not what you give her.
