I don't think it would be your stat after 2 hours of work, if the stat was faulty i'd expect problems after 10 minutes of hard work... My best guess would be a poor rad, not leaking but fins filled with cr*p... or possibly a poor water pump. A bad head gaket/liners etc usually results in water being force out by pressure, so if you have no leaks and no water in the oil, i don't think you have an engine problem. My advice is to pull the rad out and get it cleaned... might be filled with dirt between the fins or the cores could be plugging up (my combine has this issue), best bet is to take it to a rad shop and get them to acid bath it.
