It was likely written or adapted for that episode by David Rose. He and his orchestra were in charge of all music on Bonanza episodes at that time and he wrote many songs for the show. That song you refer to was aired in season 2, 1961. The show was titled "Sam Hill." One of the songs was "The Legend of Sam Hill" written by Rose that may be the one you mention.

I have all the Bonanza episodes on German and French DVDS but not all come with original soundtracks. The original Bonanza has Lorne Green (pa Cartwright" singing the Bonanza song with lyrics. That one is hard to find. Later - Johnny Cash did it and it was a hit song for awhile. David Rose wrote that song as well.
The reason why I've got foreign DVDS is because that is the only way to get original soundtracks. USA DVDs don't have them due to the added cost of music royalties.
