My son lives in Asheville, NC, and he has been keeping up with a farmer/rancher in that area who raises bison. My understanding is that the man has recently gotten necessary papers from USDA to slaughter and sell the meat. As you said, this seems to be a more serious venture than the others you mention. I have seen bison meat in some of our local markets for several years, but on a very limited basis. If I had the facilities, as you seem to have, and were so inclined, I certainly would check it out. I'm sure the USDA would have plenty of information on it.
