Our freezer has been full for a month now with fresh garden vegies fish from the farm pond and a few store bought items, that were on sale. The wifey has been dehydrating peppers carrots, parsnips, turnips, zucchini, and herbs such as dill, parsley,fennel and thyme. The prep is the same as for freezing, except the vegies go into the dehydrater, rather than freezer bags. When dry, she just puts them in jars and they go out in the canning pantry. When she need some for soups or stews she just pours out what she needs, puts the cover back on until the next time she need them. She rehydrated some carrots the other night and it was hard to believe they were crunchy little wafers. The pic. is of a batch of carrots that she sliced up yesterday. Loren the Acg
