It's probably the same thing that plagues many of those trucks. Have an '03 Silderado K2500HD myself.
Usual scenario is that you'll be driving along fine and the truck's dash dings you throws a check engine light and diplays reduced power mode on the odometer area. You have to pull over and after a restart (or several) you're back to normal running with a check engine light showing (which will reset itself after 2 more successful restarts). Seems to do it more often in cold weather. Mine may go 8 months with out a hitch then do it 4 times in a 100 miles.
It should be storing the code 1516 which is telling that the TPS and another throttle sensor have lost contact with each another for 5 seconds or more and have shut the engine down. It has to do with the engine being throttle by wire and sensors double checking each other to always know the throttle plate is under control to prevent a runaway.
A tech I know tells me that the problem is oftem worked by changing the sensors, but he has found the real culpret to more often be the wiring harness to the throttle body. He developed a test that goes beyond simple continuity check and if the wires wont carry a load, he piggy backs over the bad wire.
