Long term the only thing you can do given the circumstances is to be present as much as possible. For somebody that has to work away from the property for 40 plus hours a week plus tend to family that leaves a lot of time for mischief to happen. This neighbor of yours intends to wear you down and take advantage that you are not there 24/7. I assume you do not have money for a "campaign" of cameras and fencing? Any level-headed buddies or family available to help watch the land? One thing that helped us get a hold on a trespass issue was the company I worked for went through the initial stages of closing it's regional office so I suddenly had much more time to walk our one parcel that had an issue. Fortunately the neighbors were not the type to want to escalate the conflict. Unfortunately, not everybody has that option and the poor job market here made that possible. I hate to say selling the parcel may be the best plan for you but it may be the only way to deal with the trespass issue where you are concerned.
