The plastic sheeting should work fine, but don"t forget to uncover fairly early, or your plants might cook.
We get frosts clear into June almost every year and I have had to cover my plants many times to keep them from being killed, or at least damaged from the cold.
Once on JULY 7th, in the mid 1960"s, we had a frost that put ice on the water tank and which really damaged our garden. The potato plants, which were 6 or 8 inches tall, got black and died back to the ground. The potatoes grew new plants in a couple of weeks, but our yield of potatoes was poor from the plants that year. All in all, it was a lousy gardening season that year. Never saw frost that bad, that late again at our place.
We have also had mild frost a couple of times in late August, and usually get a serious frost about the second or third week of September. I have found that if I can get past those early frosts by covering the plants, often the garden will continue to produce nicely until mid October. But that is the way it is in Eastern Washington at 2500 feet of elevation.
I don"t think my garden space has been thawed more than a couple of weeks. Way too wet and muddy to even consider working the soil yet. Good luck!
