Poking a hornets nest here but oh well. I've had both of the trucks you mention (or very similar) and the Ford never wanted for power and was great on fuel (2wd) but when it needed a second set of HEUI injectors it went down the road. If I recall correctly your truck is an '95 auto? If so that will explain a lot of your difference, in the Dodge they derated the 5.9 in front of the auto's about 20-30hp less than the manuals, also they upped the horsepower in front of both transmission a couple of times from 94-98. I went from a '98 12v to a 2012 with the 6.7 and what a difference almost 2x the horsepower makes. You could get more power out of your 5.9 fairly easily but your transmission won't like it.
