eggs don't need to be refrigerated. Funny, I learned that in Italy - very common to walk into a little grocery shop and see a big basket of eggs on the front counter. You just pick them out of the basket.
I've since researched it, and they do in fact stay fresh for longer they you'd think without refrigeration.
In fact, if anybody is bothering with "farm fresh" eggs - you should be WELL within the window of being able to keep them unrefrigerated.
(of course, if you're selling them - most customers won't believe that they don't need to be refrigerated.)
Best way to check if an egg is "fresh" is put it in a glass of water. Sinks and lies flat - very fresh. Sinks and stands up - less fresh but ok - floats, find a new egg.
And no, you do NOT want to wash eggs - unless they really need it. They have a very thin protective layer on them that helps them to stay fresh longer. Wash them and you remove that layer. If you use soap or any other chemicals, the shell will absorb it and it will pass into the egg.
If there's... "poop" on the shell I just toss them since I've always got more than I need. But if you don't have the luxury of tossing the bad ones, you definitely want to wash those. And use cold water to keep the shell from absorbing too much.
