You drill a 1 inch hole in the backing plate (some newer model plates come with a hole pre made from the factory; it will have a rubber plug in it) Line up the broken stud with the hole and drive it out. Install the new stud and either drive it in or use a impact on the lug nut to pull it in. This can be done without removing the brakes or backing plate.
