I'd sell the 7.3 privately - they are in high demand. As said above if you trade the dealer should be paying you quite a bit. People love the 7.3, but the v10 - especially the 3 valve engine is also very good.
In 2003 the 7.3 had about 250 hp and 500 ft pds of torque. The V10 has about 300 hp and 425 ft pds of torque. If the V10 is newer and has the 3 valve engine it will have 360 hp and 450 torque.
If you are not using it to tow a lot I'd get rid of the diesel too. The repair bills on those things eat you alive. Mileage on the "modern" gas engines goes well beyond 250K.
