I bought a propane fired smoker from ASC and just love it. Have used wood all my life and had to baby sit it. This, you just put some water in the pan, load up the fire box with the wood of your choice (Hickory, Apple, Mesquite or usually a combination) run the fire up to Hi till the thermostat hits 300 (to get the wood chips to smoking good....takes about 10 minutes) and cut her back to just over low and disappear for a couple of hours.
I like the extra meaty baby back ribs. Have some fancy seasoning that comes from Penzeys Spices (www.penzeys.com...."Northwoods Seasoning" and "Barbecue 3000" our favorites...buy 'em by the bag). Rub them down good with that, smear on el cheapo Kraft original recipe sauce (like it better than the fancy stuff) and stick them in the (vertical) rib holders (ASC has them too) at about 215* for 2 hours. Finger licking good; pink all the way through and mighty juicy.
On beans, we eat pinto down here as compared to "Bush's Boston Baked". Got a brand been in business for a hundred years out of Ft. Worth: "Ranch Style". Delicious, or cook our own with a big slab of salt pork.
Add some home made mustard/mayo potato salad (add sour cream to the mix for a fabulous taste along with your sweet onions, dill chips, celery, and bell pepper), a relish tray with sweet onions, jalapeno peppers, sliced dill chips, and sweet pickles and PIG OUT!!!!!!!!!!!!!!!!!!!!!!!! If you like bread with it a french roll loaf with butter/garlic spread fills the bill, or just 3 or 4 slices of plain "white" bread......goes better with that meal than the wheat bread I usually eat.
Shucks, got my taste buds all excited. Never had ribs for turkey day but who knows. Maybe a new precedent will emerge. Maybe I'll just throw the turkey in the smoker. Smoked turkey is yummie too.
