Decade or two back, was in Austin, TX on business for a couple of weeks. Went down to 5th street to drink beer and party with college chicks, and stumbled onto some steak house on the second floor over one of the night clubs. It was pretty posh. I ordered a porterhouse, so some guy came out with a slab of beef on a cart, waving his butcher knife back and forth along the length and asked me to tell him where to stop to make the cut. I don't remember what it cost, but was expensive and worth every penny. Up to 1" thick, sirred 10 seconds on each side. Over 1" thick, 20 seconds on each side. You stab your fork into a good steak, it better go "Mooooo" and try to kick the platter off of the table.
