Think I would get to the bottom of this before any more damage occurs. Driving with the light is on is not good! Always trust your instruments!
I would put the gauge back on and place it where you can see it while driving.
If it gets good pressure when the engine is cold, and drops off to very low or nothing when idling, there are 2 possibilities: 1. There is an internal oil leak, either worn engine bearings or something has come loose letting the oil leak internally instead of building proper pressure. 2. The bypass valve is stuck open or the spring is broken. Not knowing what you're working on, the bypass valve could be in the oil pump and would have been replaced with the pump. Some engines have the bypass valve mounted elsewhere in the engine.
Another possibility, if the engine has a "bypass" type oil filter, it takes a special restricted flow filter. If it was replaced with a full flow filter, it will have little or no oil pressure.
If the oil pressure is intermittent, as in has good oil pressure, then drops to nothing, then comes back up, there could be a problem in the oil pick up screen. It could be clogged, out of position, or loose and sucking air. Some have floating pick up screens. It could be stuck in the up position or sucking air around the pivot.
You mentioned too thin oil... Again, don't know what engine you have. Older engines were designed for heavier oil, 30 weight, 15w 40, not the light stuff in modern engines.
