Sounds very much like the low oil shutdown is killing it. As you go up the hill, the oil remains level in relation to the EARTH. Engine is tipped in relation to the EARTH. If the sensor is on the uphill side of the engine, it will see low oil and shut it down - even though you have the correct amount of oil in the engine.
