You should never depend on an old saying like that. You could get very sick from it. I took a short (3-day) mushroom class of sorts many years ago in a Canadian Provincial park. One of the things that they stressed there is that there are NO positive identifiers in the field based on gill coloring. Most of the field mushrooms are identified by where they grow, whether or not they had a "bulb" at the base, and finally by spore prints. There are basically only FOUR mushroom types that are considered totally safe to eat. They are puffballs, shaggy mane, morels, and (I think - it has been a long time) oyster mushrooms. All others require expert identification to determine if they are safe to eat.
