I too am in the garbage industry, I see simular too. One thing to remember too is that it's all on a scale of operation too. There is always waste even at home it happens with food. When you have a dinner party of a half dozen people you make enough you don't run out. Usually a plate or two of leftovers, now imagine feeding thousands or tens of thousands, they likely cook thousands of pounds of food a day, so a couple thousand pounds of waste a week is too be expected. It sounds like a lot but percentage wise it's not much, same with grocery stores that handle tends of thousands of pounds of food a week, it's not surprising sometimes not everything sells and some spoils, I can tell you tho that for a grocery store that takes in many trailer trucks of food a day we only empty there trash compactor every week to two weeks so can't be too much going to waste compared to what's moving thru there!
