the prison near us, stateville federal penitentiary, near joliet il, had a huge farm surrounding it. good behavior prisioners got to work on the "honor farm" it was a minimum security facility next to the max unit. inmates worked the farm and the food was used at the prison, any excess was shipped to other prisons. they had a huge dairy, beef cattle, hogs, sheep, chickens , and other poultry. they also gew corn, beans oats, wheat, hay and silage for the animals too. was a great system until the food distributors cried foul as they didnt get to sell food to the prisons. lawsuits were filed and eventually the farms were shuddered. there are still some of the buildings surrounding the prison. what a shame. if you go to mapquest and look up stateville prison joliet il, the go to satellite view you can still see some of the old barns and the size of the farms. the sections north of the prison were also part of the farms. prolly 3 square miles or so.
