Being from Minnesota I have heard several theories about Lutefisk. One is that the fish were thrown by the corner of the fish shop and left there all winter. Dogs would lift there leg as they passed by, and by spring the fish had taken on a strong flavor. Another is that the fish was placed on a wooden bench and soaked with lye. After several months the fish was thrown for fertilizer and the bench was cut up into portions. (You can tell that I live in a German area.)
In reality, about 15 miles from my house is a very small community named Bernadotte. Their church raises much of their money by holding a Lutefisk dinner. I have heard it is well attended and the people who like Lutefisk look forward to it every year.
