Ron, your Fluke meter should have a "diode" test setting. It should show somewhere around .500 to .750 (voltage drop) in the forward direction, and "inf" in the reverse direction. A standard ohms check won't tell you anything except if a diode is shorted.
The number of diodes has less to do with the capacity of the charger than the ratings of and cost of each diode. When they first made it, it was cheaper to use 6. Now it's cheaper to use 4 of a 50% higher amp rating. You can replace all the diodes on that plate with a couple stud mounted rectifiers like this that would never blow out: http://www.digikey.com/product-detail/en/vishay-semiconductor-diodes-division/VS-300U30A/VS-300U30AGI-ND/352844 but the cost is probably prohibitive.
