So if your in fact did a true restore you should have every thing back at factory specifications and if so it should be an easy start so either you just fixed what needed to be or you did something wrong.
I hate the term restore because few ever do a true restore they just fix and paint and that is it and that is not a restore.
You say you have good gas flow and good spark so is the spark good enough at all 4 plugs to jump that 1/4 inch plus gap?? You also say you have good compression as in what PSI?? If your compression is less then 90PSI you have poor compression. You may even have the timing off at the cam or the distributor which will cause hard starting or maybe you have the points set wrong. Many people make the mistake of setting the front mount distributor points at 0.025 and that is wrong and will cause starting problems
