First thing you want to make sure of is the tractors you use has R.O.P.S. and a seat with a safety belt. Be sure to wear that belt and have that ROPS up and correctly in place if a fold down type. Those tractors likely have fixed ones given their age. Any have cabs ?
There has to be some specs you can research and compare to what these tractors are safe for. Measure the slopes to be sure.
I've worked on hillside fields for many years, '64 4000 Ford, 850 ford W/ loader, 4630 FWD, 2010 narrow and wide front JD on this land. 4440, 3150 FWD JD on all of the surrounding lands, some of which are steep. The 3150 tolerated slopes I was uncomfortable with. The farmer whom I worked for also had an '06 7420 JD FWD and he knew these fields since a kid, so wherever he went I knew I could. I made sure to run the same way as he did. Grain crops and hay ground.
It's not the easiest thing to get used to, that gut wrenching feeling is creepy. That narrow 2010 I did not like and that one gave me the worst of that feeling on a moderate slope running parallel to it with a rotary mower. No ROPS, and not a lot of training by anyone. Thankfully, I was careful and no surprise chuck holes.
Know your fields up close, walk them and look for hazards like new chuck holes.
My 4630 FWD seems to be a very stable tractor on the slopes around here, taller than the other Ford tractors I have operated for many years, but never any problems. Rears are loaded on this one. I'm sure that helps.
Use care on grassy fields, there are times that they can become slick.
