The flat side goes toward the flywheel, the protruding side toward the pressure plate.
As for bolt torque, you can look that up online. Just need to know the bolt size and grade. There are charts for the torque.
But more important than torque is that the bolts are drawn down equally, a little at a time in a cross pattern. You want to compress the PP springs equally so as not to warp the plate or housing.
And you really need an alignment tool. Without it, you are just guessing, and that will cause the restabbing process to be very difficult. Trying to force an input shaft into a misaligned clutch disc is very likely to damage the disc, cause chattering or failure to release.
