I suppose there are a number of reasons tractor manufacturers don't use automatic locking differentials, as are common on cars and light trucks. It's probably difficult to make a heavy-duty limited slip differential that will respond quickly enough at tractor speeds to be useful without locking up at the wrong time.
One obvious problem is the use of turning brakes on tractors. If you hit the right brake, a limited-slip differential will sense slippage on the left wheel and lock up. Exactly what you don't want it to do when you're making a sharp turn.
BTW, you can use your brakes to control wheel slip: If a wheel on one side starts to spin, tap the brake on that side. That will shift torque to the other side and will sometimes get you unstuck.
