As you're in the DFW area and usually get some snow each winter, the grass needs to be cool-hardy. So next question is, how often will the air strip be used? Seasonal? Year-round? Will there be a lot of touch-and-go, or will there be minimal traffic on it?
For that area, and not knowing what all you have in mind, I would probably go with a variety of Bluegrass called Yukon. Here's a web page that tells more about this specific grass:
It would also help to know the amount of maintenance you have in mind for this strip. Will you be mowing regularly? What about water, or the lack thereof? Before planting anything, maybe a visit to a local expert would be beneficial for you. You could check out your local municipal airports, but they will have paved strips. So then you could speak with greens maintenance at local golf courses, or inquire at your local extension office.
