Dunno WHY you removed the thermostats... they are the type with a plate on the bottom that closes off a coolant bypass passage as the engine warms up to 190º and the t-stat opens.
With the thermostats removed, that function is gone, and coolant is free to recirculate in the engine without making a pass through the radiator.
First thing, replace the thermostats with new OEM ones, then use an infrared heat gun to read actual temperatures, and see if there's still a cooling issue, or if the electronics are lying.
