The size of some dairies in the southwest is amazing - I've seen some that are over 10,000 cows with milking going on around the clock. It always surprises me that you find such operations in the middle of a hot, dry desert. I'd be a little concerned about the long-term water availability for agricultural use, especially considering how fast the cities in that part of the country are growing and increasing in water demand.
